Veg recipes needed

So I got a delivery of an organic vegetable box today and I need some recipes or most of it will go to waste :oops:

There's beetroot, courgettes, sugarsnap peas, spinach, pointed cabbage

Any ideas? :)

    If all else fails you could just create a really unique salad?

    The spinach could be used for a nice quiche...

    I'll have to ask my girlfriend about the other stuff as she is very skilled in culinary stuff.

    Do you have a timeline on when ou need this stuff?

    :D excellent! Nope... no timeline but I'm gonna try use most of it over the weekend.

    I just HAD a fab salad... used some of the spinach and beet leaves and the peas and mozzarella and sun dried tomatoes (also got from the organic place) and some olives (from a jar :oops: :mrgreen: ) and made a dressing... it was yum. Now I have some grapes and blueberries to look forward to :D

    Think I'm gonna get one of these boxes every week... if I can figure out how to make the most of them :oops: otherwise there's no point.

    i would just eat the sugar snap peas raw ...

    i would smoothie the beetroots or make a beet salad

    i would grill the zucchini

    make a cole slaw with the cabbage and whatever left over you can make into sauerkraut

    with the spinach - i would just toss with some olive oil and garlic ... unless i was making a roast chicken - in which case, i would cook it with the juices left from the chicken with some tomatoes

    Yeh, I'm ahead of ya with the peas :mrgreen: we used to grow them when I was a kid and it was the only way I'd eat them... these ones aren't quite as good though :oops:

    Unfortunately a blender is still on my shopping list... I don't actually have one :oops: so maybe I could mash the beetroot instead? :mrgreen:

    coleslaw would be cool... I was hoping there'd be carrots in the box but I guess I can just buy some. Although, I quite like raw cabbage too.

    Haven't had a roast chicken in a while... so that could be on the cards :)

    Can you ask her how long does she reckon this stuff will stay fresh for (straight from the farm today) and what's the best way to store it? (we don't have a cool room really so it's kinda fridge or no fridge basically)

    mmm... grilled.. just on their own or what would you do with them?

    with most things on the grill ... a little olive oil with some S and P and you should be good ... you can buy a generic vegetable grill seasoning and apply it to any veggies you may get in the future ...

    We had both of those growing in our garden when I was a kid too. But somehow I haven't 'discovered' beetroot til recently but absolutely love it :oops:

    Ive never used beet root before, but if it’s the kind of root I’m thinking of, almost like a ginger root, you could just stick it in the freezer. The courgettes will go bad the fastest I would think, I would say 8-10 days they will stay, but if there’s no refrigerator, I would say about 5-7? You can also freeze the sugarsnap peas and they will stay for atleast 2 weeks in the fridge. And the cabbage im not too sure about. Good luck!

    if they are fresh from the farm ... you have some time ... the beets i would keep in the fridge, same with the courgettes and snap peas ... the cabbage will last till winter ... hahaha ... seriously tho - it will last a long time!

    :D ah I figure it's all good for you... I boil the potatoes in teh same saucepan as the veg so I bet their vitamins go into the potatoes :D and I boil it in minimal water. I don't believe everything I hear :mrgreen:
