But listening to the song, I've always heard, and I think it makes overwhelmingly more sense, "Wounded is the old man..."
I always thought it was, "wounded is the sailor", or "servant".

I can see how it gets mistaken as "a furry thing," but come on people... really? The actual lyrics are so beautiful in their symmetry, especially when considered in the context of the rest of the song -- it's the best line on the album, IMO, and I'm sad that so many people seem to mishear it.

I've read Ishmael, My Ishmael, and several of Quinn's other books (Story of B, Beyond Civilization, and another that's name escapes me now) -- and perhaps, like discussed above, it's intended as a pun. But I promise (since we're making promises now), there's no way "You are everything, and everything is you," followed immediately by the line of the same message and structure: "Me, you... you, me," was coincidental/unintentional.

And upon further reflection, it's probably the case that everything/a-furry-thing was written, like breakerfall/break-her-fall or violins/violence, as a clever play on words. In my opinion, that simply adds an additional (and for me, before-now-unrecognized) level of depth to the line.
In any event, the syllabic breakdown of the Faithfull line is "you are, you are uh-fur-ee-thing," which is how both "a furry thing" and "e-very-thing" would sound, unless he made a conscious effort every time (a furry time?) he sang the line to hit a hard "v."

But to address your larger question -- I could be wrong, but I don't think anyone here was doubting that he sings, "Young girl... violins...." They were just pointing out that the lyrics in the liner notes to Vs. read "violence" instead, and that it's not out of character for Ed to make clever word plays that can be read intelligently either of two ways.
