What are your fav veggie recipes?

    Vegan Broccoli Quiche Recipe

    This egg-free quiche recipe uses tofu instead of eggs for a healthy and low-fat vegan breakfast. Although the recipe calls for mushrooms and broccoli, you could always substitute your favorite vegetables instead. This eggless quiche recipe is both vegetarian and vegan.

    INGREDIENTS:
    1 pre-made pie crust
    1 tbsp olive oil
    1 cup chopped broccoli
    1 cup fresh sliced mushrooms
    1 pound firm tofu, patted dry
    1/2 cup vegan parmesan cheese
    1 1/2 tbsp garlic powder
    1 tbsp dried basil
    1/2 tsp salt
    pepper to taste
    1/2 cup soy milk
    PREPARATION:
    Pre-heat the oven to 425 degrees.
    Heat the olive oil in a medium saucepan over medium heat and sautee the broccoli and mushrooms until cooked, about 8 to 10 minutes.

    In a blender or food processor, blend the tofu, vegan parmesan cheese, garlic, basil, salt and soy milk until smooth. Stir the vegetables and the tofu mixture together and add pepper to taste.

    Pout the batter into the pie crust. Bake for 30 minutes, or until a knife inserted just off-center into the quiche comes out clean.

    Hey, thanks for starting this thread...I just became a vegetarian in April and am slowly learning more recipes. Mainly I am eating a lot of meat replacements like veggie burgers etc. I just subscribed to Vegetarian Times, and they had some cool recipes in there. I hope more people post so I can learn from you!! :D

    By the way, are any of the guys in the band vegetarians or vegans???

    I made my son a vegetarian quiche yesterday used you're average quiche formula, shortcrust pastry base, 2 large eggs beat and whisked in 300ml milk
    with cheese coating the pastry and mushrooms, peas and onions as the filling.
    Can not be arsed with life no more.

    I eat spaghetti a lot. Otherwise, I'm more of a baker than a cook, so I don't have many veggie recipes unfortunately. Here's an omelette, though. I have a rice cooker, so I make a batch of rice, and when it is done I start the omelette.

    2 eggs
    splash milk
    pinch paprika
    pinch salt
    pinch black pepper

    Loosely mix those together

    Grate some cheese
    Slice/chop a little onion
    Slice a little avocado
    Chop some tomatoes, make sure they are meaty tomatoes like plum tomatoes as opposed to watery

    Heat a skillet, add a couple pats of butter to cover bottom of skillet, add egg mixture. When it starts to solidify, add the chopped stuff, wait 30 seconds then fold over one side of omelette towards the other. Flip over after 15 seconds. When all is solid, scoop onto a plate of rice.

  • Veggie Bean Soup

    Using the "quick boil" method soak and boil 1 cup (DRY) of each of the following beans: Kidney, Pink, Pinto, and White Northern. in about 8 cups of water (rinse to make sure water runs clear) with 2 tsp. salt. Let beans continue to cook over a simmering heat (beans will be ready to eat when they can be gently mashed with a fork - a good rule of thumb when cooking beans is to pull one from the pot, mash it with your thumb and test it against your teeth for grittiness. if it feels grainy then they should cook longer.)

    in a pan with 2 Tbl Olive Oil - sautée the following:

    1 heart of Celery (chopped)
    6 carrots (chopped)
    1 (small white or yellow) onion (chopped)
    4 cloves garlic (minced)

    add finely chopped tomatoes to the beans and allow the tomatoes to color the bean water (which has boiled down into a thicker soup)...add the sautee mix and cook until the veggies are soft.

    yum!

    1 lg onion minced
    1 sm. green pepper minced
    2-3 lg. firm tomatoes minced
    1/2 - 1 whole avocado minced (to go with the PJ theme of course :)
    1 cup corn
    1 can kidney or pinto beans (drained and rinsed)

    Mix all ingredients together then add fresh lime juice, salt, pepper and cilantro to taste.
    Serve with tortilla wedges or tortilla chips. Enjoy!

    PS: my friend adds minced jalapeno to hers, but I prefer it without.

    Lost the damn thing and it's just not turned up anywhere! :o

    But I make a few things just off the top of my head, from experiments and trial and error. Mostly I just try to adapt regular recipes to vegetarian.

    Often make Chickpea Curry which is really simple:

    a chopped onion
    cloved of garlic crushed
    minced chilli to taste
    can of chick peas
    can of chopped tomatoes
    small can of corn kernels
    tzatziki
    coriander to garnish
    rice to serve

    cook onion, chili and garlic in a little olive oil till the onion is transclucent then add a can of chickpeas, drained and rinsed, a can of chopped tomatoes, a small can of corn kernels drained. Cook on a low heat for 10-20mins. Add salt and pepper to taste. Serve over steamed rice with a scoop of tzatiki on top and sprinkle with chopped fresh coriander.

    I also make a "Mexican" variation of this by replacing the chili with Mexican flavor base, and the chick peas with kidney beans. I also add some diced capsicum at the same time as the onion goes in.
    When it comes to serving I get some flour tortillas and spoon the cooked sauce mixture onto the centre of the tortilla (that I've warmed in the microzap) sprinkle on some grated cheese, chopped fresh tomato and shredded lettuce and then roll it up and spoon a dob of tzatiki on top before serving.

    From a PETA cookbook :) .... very yummy, goes over well with the kidlets

    1 c sugar
    1 cup + 6 Tbsp. Margarine
    1 c flour
    1/2 tsp. salt
    16 oz. choc syrup
    1 tsp. vanilla
    1 c confectioners sugar
    2 Tbsp. green Creme de Menthe
    1 c choc chips


    Preheat oven to 350
    Cream together granulated sugar and 1/2 c margarine.
    Mix in flour and salt then add syrup and vanilla until combined
    spread into greased 9 x 13 pan and bake 30 mins.
    Meanwhile mix together confections sugar, 1/2 cup margarine (melted and cooled) and the creme de menthe.
    Spread over cooled cake
    Melt remaining margarine and choc chips then cool slightly
    Spread over creme de menthe mixture
    Refrig until set then cut into squares

    grilled portabello and veggie sandwich on grilled foccacia bread with chipotle mayonaise.

    - sliced zuccinni lenghtwise

    - sliced red bell pepper

    thick sliced red onion

    - whole portabello mushroom minus the stem

    - sliced eggplant lenghtwise

    toss veggies with balsamic viniagrette dressing and grill til tender

    grill halved foccacia bread drizzled with olive oil

    place veggies inside portabello mushroom and served onto bread , add lettuce and tomato.



    mayo: chopped chipotle peppers and mix with mayo. more peppers= more spicy. ENJOY

    They are not bad. There are several different companies. IMO once you smother them in toppings they basically taste the same.

    We were at a Greek festival in my neighborhood a few weeks ago, and there was a 2 hour wait in line for the Gyros. Two of my friends and I decided to develop Veggie Gyros and this is awesome.
    Gyros are the pita bread with yogurt cucumber sauce and the little pieces of lamb and veal that rotate on the little vertical grill if you’ve ever had them. They slice the outside of the animal carcass :) when it's crispy golden brown so the trick is to duplicate that to have a good flavor.
    I used extra firm tofu which was good, tempeh which was better, and veggie sausage which was best! That comes in a tube like Jimmy Dean sausage

    It takes a bit of time to get the stuff ready, but then you marinade it overnight and make them the next day and it’s easy!

    A slab of tempeh , or extra firm tofu cut into 1/4 strips, or that sausage, formed into thin strips like 1/4 inch and maybe 2 inches long

    This is the “meat” marinade for the above:

    4 chopped garlic cloves
    1 1/2 teaspoons dried oregano or better some fresh oregano
    1 small chopped onion or 1/2 half of a large onion. You use the other half below.
    1 teaspoon salt
    1 teaspoon pepper
    1 teaspoon thyme
    4 tablespoons olive oil
    1/8 teaspoon cinnamon
    1 teaspoon rice vinegar or other vinegar


    Tzatziki is the official name for the white sauce that goes on the pita:

    1 cup peeled grated cucumber
    2 or more chopped garlic clove
    1/2 teaspoon salt
    1/4 teaspoon dill weed
    1/2 teaspoon mustard powder
    1 1/2 cup plain yogurt or for vegan, use soft tofu that you would use for smoothies.
    1 tablespoon parsley
    small onion, or the other half of that large onion
    1 tablespoon olive oil
    1 teaspoon vinegar
    1 teaspoon oregano

    Other:

    4 - 6 pita breads
    olive oil (for cooking)
    lettuce
    tomatoes
    Red peppers,
    Whatever else floats your boat!

    To make gyro "meat" cut tempeh or sausage into thin strips 1/4 to a bit more in thickness.
    Next make meat marinade
    Pour the marinade over the tempeh to cover it and place in fridge to marinate for at least 4 hours, preferably overnight.

    Next, make tzatziki- combine all ingredients listed under tzatziki. Stir well and also place in fridge to sit for at least 4 hours, preferably overnight.

    When you are ready to eat, set the tzatziki out to warm slightly while you cook the tempeh or whatever you used

    Heat a large frying pan or you can wok it with 3-4 tbsp olive oil and heat over medium, once heated place Tempeh strips in and let them cook until each side is golden brown.

    Remove from pan, and one at a time heat the pitas over medium heat until soft and warm.

    Then layer your gyro (pita, tzatziki and tempeh) with lettuce, and/or tomato if you like.


    Warning: all the above ingredients are approximate and you can’t really screw this up!

    I just made a vegetable soup.

    Some leaves of lettuce
    Half an avocado
    A leek
    A couple plum tomatoes
    zucchini

    put them in a food processor, add water until it's the consistency you like, and BINGO! Would have been good if I had crusty bread and a wonderful cheese. Oh well.

    Leek and avocado are necessary as far as flavor. Very nice green color. Juicier tomatoes may have been better as I didn't want to resort to adding water, but I guess vegetables as a whole may have less water than fruits. I do this with assorted fruit all the time, and it's a great pick-me-up fruit smoothie. I have to find out more about vegetables. I'm interested in exploring the raw foods idea, not as a lifestyle change, but more as a lifestyle food choice enhancement. Raw is easier :D

    Great Thread!! This is my new favorite- it's even good the next day and beets are in season right now :) I can't claim the recipe as my own but it is delicious!

    1 med beet-peeled and quartered (I use 2 beets)
    2 cups loosely packed beet greens (stems trimmed)
    2 cups water
    2 cups veg broth
    2 tbs evoo
    1 med onion minced
    1 cup arborio rice
    8 oz shredded sharp chedder (2 cups)
    salt and fresh ground pepper
    fresh grated parm cheese (for serving)

    place beet in food processor until finely chopped- add the beet greens and pulse until finely chopped

    in med saucepan bring water and veg broth to a simmer. heat oil in a large saucepan. add onion and cook over moderately high hear-stirring until softened-3 minutes. add the rice and cook stirring for 2 minutes. stir in the beets and beet greens and cook for 1 minute. add the broth to the large saucepan- 1 cup at a timeand cook over moderate hear, stirring until the liquid is nearly absorbed between additions- 20 minutes. Add the chedder, season with salt and pepper. Cook, stirring until the risotto is creamy and thick- 3 minutes longer. Serve with Parmigiano on top :)

    I just talked to my brother on the phone and he said he just turned back to being a vegetarian. He was a Vegan before but it just about killed him. He is slightly overweight and his wife just had a baby and got a good job so he is staying home looking after the boy (who's middle name is vedder btw ;)). He said he wants to watch his boy grow so he is working on his health. Good on him I say!

    1 can kidney beans (drained and rinsed)
    1/4 onion sliced paper thin
    1 T cider vinegar
    1 T olive oil
    1 tsp. sugar
    salt and pepper to taste

    Warm in a small pan until onion is soft. Serve.

    I made vegan french toast yesterday and it turned out really well (from a cookbook called Vegan with a Vengeance)

    It calls for
    sliced bread (like french from a baguette), preferably stale
    1/4 cup chick pea flour
    2tbsp cornstarch (I didn't have cornstarch so I subsituted egg replacer equivalent to 1 egg, mixed with the appropriate amount of water)
    1/2 cup of soy cream (like Silk that you'd put in coffee or tea)
    1/2 cup of soy milk (or rice milk)
    I think I put a little salt in the mixture.
    You mix it all up, put the bread in it, fry it in oil, have it with maple syrup and it is GOOD. I tried it with some trepidation but it was really good. Even my husband who is a little wary said it was good.
