Help Needed From Pit Members- Food Ideas

I have a project due in work and I am reaching out to you guys for ideas. Everyone gets the writers block from time to time. OK, as a chef I am required to write different menus and things with themes and submit to my superior. By Jan 4th 2008, I need to submit 8 ideas for snack breaks / breakfasts / lunches etc with these guidelines:

Hot Breakfast / "Rocky Balboa Theme"- 2 items

ex ( Pauli Pancakes with Raisin Nut Syrup )

PM Snack Break-"Local Philadelphia Sports Pride" Theme- 2 items

Themed Lunch " Down the Shore " - 2 items

"Music / Entertainment Theme" - 2 items ( Must be from NJ or PA )

ex - The " Boss " ton Break Assorted Creme Eclairs / Donuts / pies ( thats 1 idea, I have )

Any ideas would be helpful and considered by me

Hot Breakfast - Paulie Italian Scramble (eggs, italian sausage, parm, etc) & Apollo Creed Cakes (Apple Pancakes with Apple Compote)

Philly Snacks - AJ Feely Mini Sub Sandwiches, little sandwiches you can throw directly to Lofa Tatupu. Sorry, had to be done.

Down the Shore - Cioppino w/ crusty bread & Deep fried salmon screwers.

I like the scramble, I have written that one down but added some extra ingredients, prociutto and things.

thank you for the suggestion, keep em comin'..Please remember that these items may need to be made for a couple hundred people , we shouldnt get too crazy.

Funny....I originally had it as a Paulie Prociutto Scramble! But changed it to italian sausage.

Breakfast-adrians oatmeal (with dried fruit and nuts) and eggs balboa (english muffin, cheese, beef pattie with a raw egg on top)

Philly snack-the flyer slider (smoked salmon canapes with black truffle or black sesame) and 76er strawberry smoothie

Shore lunch-lobster roll and fried clam, oyster, shrimp or crabcake po boy

Entertainment theme-bon jovi bon bons, southside johhny cakes

there ya go, tried to find a way to get some scrapple in there, but it just wasnt working
