Moving to uni in the next few days and i wondered if anyone here has any simple recipes + instructions for food, mainly dinner in the evening. I can get by on toasted sandwiches for lunch :P

Other variation on this theme is bake the chicken at 350F after being rubbed with olive oil and some seasoning (I use Montreal Chicken Spice, which is just a premade mix that is tasty)... Before you throw it in the oven, slice some sweet potato julienne-stlye (long and thin), throw them on a baking sheet, throw some oilve oil, salt and pepper over them. Then throw everything in the oven for about 20-30 minutes, cooking some vegetable for the last 5-10 on the stove, and it's done. Yummy chicken and sweet potato fries with a veggie!
Then there's always tuna noodle casserole: Cook some egg noodles. Throw them in a casserole dish with condensed cream of mushroom soup, peas, and tuna, then put it in the oven at 350F for about 20-30 minutes.
Try....
One can peeled plum tomatoes
Some veg (Aubergine, courgette, mushrooms, pepper and red onion)
Bread crumbs
Garlic paste
Tomato puree
Herbs
Pine nuts
Parmesan grated cheese
Goats cheese
Fry off yer veg and put it in a cassarole dish (or pyrex dish). Throw in a can of peeled plum toms, the tomato puree, herbs and garlic and mix. Top with goats cheese. On top of all that put a mixture of parmesan, bread crumbs and pine nuts. Whack it in the oven (about gas mark 6) for about 30/40 mins. Take it out and eat!
Mmmm delicious and easy
... and I still think Drive-By Truckers are better.
Cook up some (fresh) chopped veggies in chicken stock. Add tiny pasta shapes just before the end...Minestrone soup.
Also invest in a good student cookbook. I still use mine, it's great when money's scarce.

It's cheap, it's easy, and I survived on this stuff in college, 3-4 nights a week.
My favourite though is to fry some chicken in olive oil, soy sauce, fresh chopped garlic, black pepper and mixed herbs. Add mushrooms and/or broccolli/bacon/whatever. Serve either with potatoes, rice, noodles or pasta. Tis yum, healthy and very very quick.

Also, check out the million or so recipe websites on the internet. Food Network has lots of good ones. Also, you could watch the Food Network for ideas, but steer clear of Emeril's recipes, which are often kind of lame in my opinion. ("Now throw in 27 cloves of garlic!") Stupid.

Also Ed, where are you going? If it's anywhere around London, JAMAICAN LAMB PATTIES. They are a whole meal in one cheap, easy to cook, hard as a rock pastry.
