I've really just begun to cook on a regular basis, and I'm constantly looking for new recipes lately! I like cooking for the fam...it makes me feel so domestic! (Good thing, since I'm a housewife...lol.)
Roasted Garlic Chicken & Homemade mashed potatoes
(So easy!!)
Chicken
Whole chicken (I use a 3.5-5lbs one depending on what the store has)
chopped garlic (I get mine in a little jar)
butter/margarine
Powered garlic salt
all season seasoning salt
Rinse out chicken with cold water. Place chicken in small shallow baking pan. Melt about two tablespoons of butter/margarine and a tablespoon of chopped garlic. Pour mixture all over the outside of the chicken. Double that same amount you just melted, and re-melt and pour into the empty chicken cavity. Sprinkle garlic salt on the outside of chicken, as well as the all seasoning. Bake at 375. I use a meat timer to tell when it is done. It took my 3.75lbs chicken about 1.5 hours last time.
Potatoes
Potatoes (Yukon gold work really well and make it have a more buttery flavor)
Milk
Butter/Margarine
Salt
Boil water in a large pot. Once water is at a rolling boil, put in peeled and cut up potatoes. Continue to boil the potatoes and water. When potatoes are soft enough for a fork to go right through them, they can be drained. Mash the potatoes with a masher, and then add milk, butter and salt to the pot. I don't measure them out, I do them by taste. I use A LOT of butter, and less milk to give it a richer taste. Use an electric hand mixer to blend ingredients. Tastes a long the way and add to the potatoes depending on taste. (Most often, salt is needed) Keep blending until you find the right balance of the ingredients, and you're good to go.
Like I said, VERY VERY easy, but tasty meal. The chicken is SUPER juicy when you put the butter inside of it. Serve both right away before they get cold, as to not lose the juiciness of the chicken.
