I have an idea...but do you cook the potatoes first or do you put them in the pan uncoooked:D

I feel like cooking some tonight.....

    Personally, I prefer to put them in the pan uncooked, cover with a lid, and then cook the hell out of them on relatively low heat. This takes forever, but it's worth it for some good home fries! :) Also, my great-grandmother - who makes the best home fries of all time - always says not to turn/flip/stir them until they've started to brown on the bottom. (She also usually adds a bit of bacon grease. :) )

    Mmmmmmmmm.................. I might go cook some now!

    I can't wait to hear how everyone else does it!

    i slice the taters really thin, spray a bit of olive oil and sprinkle a bit of paprika or cajun spice on top, pop them on a tray lined with baking paper and stick them in the oven - best chippies ever

    dip them in sour cream, or salsa or guacamole, glass of red or beer or whatever, yum :)

  • I always thought subjecting starches in potatoes to high temperatures mutates the compounds in them to produce cancerous byproducts? It's the excessive temperature of boiling oil that does it....such as in potato chips, french fries etc..

    I remember reading an article about this years ago....

    And what's this about turning over? Pat your cut potatoes dry. Submerge them in hot oil until they fluff up (but no colour). Take them out. Let them cool off. Then do your second cooking which will colour them. Yummy.
  • well I finally made it...it came out alright...i put them in the pan raw and I seasoned them with a little salt, peprika and fresh onions...the one I get from the store are lighter in color than mine...I guess they precook their potatoes:)

    I'm sure I'll make it again:)
