iTunes help

Ok, so I just got an iPod after having 3 mp3 players go to shit on me...and I amnot very happy with how un-user friendly it is. Now, before I flip out and throw the thing out the window, I figured I would ask some questions since I am a rookie at iTunes and maybe I am missing something...
1) A bunch of song that I do NOT want on my iPod were automatically transfered and it won't seem to let me delete them...how do I remove them from my iPod?
2) Is converting all 15,987 of my music files to AAC format necessary?...is there another way to do it rather than iTunes itself, b/c it's taking for-fucking-ever!?
That's all I can think of for now...I will add as I go and thank you for any help you can give. My sanity is on the line, here.

Is it so wrong to think that love can keep us safe?

Find shapes in the clouds.
Hear the murmur of the wind
and touch the cool water.
Walk softly,
we are intruders,
tolerated briefly
In an infinite universe.
As for converting to AAC, i think you can put them onto your ipod without having to do that, not sure though, it's been a while.
was like a picture
of a sunny day
