The coroner DID notice.
He mentions in the first page of his report that the body appeared to previously have been autopsied.

Even though the body was theoreticaly fresh and just arrived FOR autopsy.

One thing you should know, however, is that that coroner was hand selected by the conspirators because he had never performed a fire arms homicide in his entire career.

That coroner failed to do multiple key proceedures (like investigating the neck wound) that a trained homicide forensic pathologist would routinely do.
That coroner also burned his notes
