what would you guys use to put together like a tape demo with 5 or so songs

That costs about $20,000, and tape ain't cheap, either.
There are cassette-based 4-track recorders out there, and they're all pretty similar.
For legit demo recordings, though, you'd be better off getting a cheaper mixing board and a few mics and mixing everything into a cassette deck, OR getting a decent 8-16 track digital recorder.
What it comes down to is that you pay for what you get.
The cheapest solution would be a cassette deck or microcassette recorder with an internal mic or jack for an external mic... just set it up in the middle of your space and push "record". It won't sound great, but it'll get it recorded and won't break anyone's budget.
