Anyone know what happens with u sold merch from shows if there is any leftover?

It's put into mystery boxes to sell on the next tour.

Every couple of years the sell mystery boxes in the 10c shop. There has not been a mystery box since 2019, so I'd like to think we're due for one.

Yep....you have to look in the wooden crates behind the Arc (notice that it isn't lost) of the Covenant.  There would be a lot to draw from...Would it be Lightning Bolt tour and after?

Mystery Boxes for the most part.  On rare occasions they might put some stuff in the 10c shop (like last years tour rat shirt) but don't hold your breath.
