Does anybody know who writes the set lists that appear on stage for the band to play off of?

if you mean, who writes the setlists, then yes, its ed (with some input from others). if you mean, who actually writes the words down on paper, then i think each writes his own. the 2000 official boots have the handwritten sets for each show in them, and you can tell who writes what (ed and jeff's handwriting is especially easy to spot).
the setlists that appear on stage, along with those distributed to the support crew (all photocopies of the original) are written by Kevin Schuss, after receiving the master setlist from eV,...
