I know this type of thread has been done before, and yes I know how to use the search function on the forums, but whatever, I'm making the thread again.

Hey Baby - Jimi Hendrix (if you've never heard it, do yourself a favour)
Ramble On - Zeppelin
Not Fade Away - Stones
and for something a bit newer:
Razorblade - The Strokes

anything else?

Since they've taken to doing some X covers, I'd love to hear Boom mash up the keyboard jam on "The World's a Mess, It's in My Head". "Devil Doll" or "Poor Girl" would be great too... and Ed knows them already, so there's no excuse

Yeah, would love hearing them sing Britney's "Oops I did it Again". A lot of other rock'n roll bands have done the same thing.

*applauds* Exactly! I've posted this a number of times myself. I could not agree more! :)
If I could pick just one thing for them to cover this would be it. It suits Ed so perfectly. He would absolutely nail it.

they played all along the watchtower san fran III. it's kindof like a mix between hendrix's version and the original dylan one.

Try to listen something from "Pink Moon" of Nick Drake.
    Masterpiece of the masterpieces.

In that a bunch of songs could be finely covered by EV (Ride, most of all)

Anyway: desert island long playing, definitely.

If I could chose one song for PJ to cover it would be Bob Marley Redemption Song.

It would work really well as an Ed solo opening after encore break.
