18 degrees, sunny, blue skies, smoky & on. happy new year's folks. it's fucking on! it is time to cook & time to break in 2013 & bring it in with a wonderful way to cook. this is an inspirational method of cooking & i hope i cook this way many, many more times this year.

    well that was a tasty bird & hog. the pork was a bit dry & literally pissed me the frig off. i really get bent out of shape when my grilling/smoking turns out to be anything less than amazing. slightly dry slightly dry. fuckin pig you dry bastard.

    the turkey is perfect & will be righteous throughout the week

    i'll be diving into brines, marinades & whatnot. in the next few days after folks have settled down from the holidays i'm going to call the nearby orchards and aquire myself apple & other woods from their trimming work. this is valuable stuff. today i used soaked apple wood chips. soaked them in water 2-3 hrs prior to putting in the charcoal.

    time to find me some hickory trees. nuttin like a hickory grilled steak...fuck
