Movies Everyone Should Watch?

I've recently been on a movie kick. I've been trying to watch some movies that I've never seen and that were rank pretty high on lists of great movies.
Just recently watched:
Full Metal Jacket
Trainspotting
Hot Fuzz
Shaun of the Dead
Chinatown
Really enjoyed all of these, some more then others of course.
On my list of next so far are:
2011: A Space Odyssey
Mad Max: Road Warrior
So I was just curious of your opinions on some great movies that you would recommend as something everyone should see.
