Can't go wrong with Love Is Hell and Jacksonville City Nights too.
I'm a huge Ryan fan and pretty much like all his stuff.

Whiskeytown has some fantastic albums in Strangers Almanac and Faithless Street.
Ryan's solo stuff is spectacular as well. As someone else said, Love is Hell is my favorite as well, but Gold, Easy Tiger, and Demolition are also great. The only album of his I haven't heard is 29.
He also has something that hasn't bee officially released I don't believe, but if you can find it I highly recommend getting a copy of it somehow, it is called Pinkhearts Vol. 2.
Then, you haven't even touched on Ryan Adams & The Cardinals. Cold Roses is an absolute must, as well as their EP Follow The Lights.
I'm also going to recommend a Willie Nelson album called Songbird. It was produced by Ryan and features him and The Cardinals as Willie's backing band. Truly a wonderful record.
Enjoy listening, Ryan is one of the greatest songwriters of the past 15-20 years in my opinion.

Definitely, and as you also pointed out, he has been impressively prolific... and consistently good.

He does have some stuff that I can see being too poppy for some. He kind of reminds me of Paul Westerberg in that way. In fact, I really think that Ryan shows an influence from PW and The Replacements.

certainly im not going to argue with the OP, as exploring the dischography of ryan adams is highly recommended. but the word poppy is not something i'd even say in the same breath as Ryan adams. not that pop is bad. i'd argue thats probably harder to write a pop tune than a indie/rock tune. but part of what makes ryan adams so brilliant is he is a true artist. follows his muse no matter what that is, and no matter what anyone else may say. but the guy has explored everything from alt country, to death/heavy metal to softer sounds just him and the acoustic guitar. i think he's alot like dylan or neil young in that respect, he has tried and done a ton of different styles and genres, yet no matter what he does its always brilliant. he hates being pigeonholed. Plus he's a guy thats beloved yet really isnt popular. probably his two biggest hits are maybe on the poppy side New York New York and When the Stars Go Blue but even those, they are popular and hits for a reason: they are damn good

Either "Heartbreaker" or "Gold" are a good place to start. If you ever get a chance to see him live, go.

It's called the Suicide Handbook. It's a primarily depressing collection of songs which, when combined with a few other unreleased albums, would form the album Demolition. Generally stuff with a similar sombre, introspective feel to Heartbreaker and Ashes & Fire, I would quickly recommend this 'album' to anyone.
In addition, for country music lovers, Jacksonville City Nights is a stellar album, which features Dear John, which was written and recorded with Norah Jones and is a gorgeous track.
Also, 29 is a primarily acoustic album, with the exception of the title track. Night Birds and Carolina Rain are stand-out tracks for me on that one.
