Is there an easy way to tack on a single/song/b-side to an album...so when you select an album to play, it will also play the extra songs at the end?

Currently I've just been adding track numbers to the album's info, but I was wondering if it can be easier than this.

Indeed. You can edit the 'sort album' field in the information pane to virtually add those songs to an existing album - make sure you number those songs after the tracks of the actual album if you want to keep the original track order and have those 'extra' tracks played at the end of it.
