Transferring AIFF files

I have a lot of music folders that have been converted to aiff files (originally flac/shn/wav files) - I have a mac mini.
Years ago when transferring from one external hard drive to another i ended up with over 4,000 songs where the artist and album name were wiped out. Needless to say most were PJ shows. I am now in the process of transferring again and have to transfer my aiff files one at a time so I don't have a repeat of the first time. Anyone know how I can transfer these aiff files without losing information?
By the way all the files affected - the album names all start like this i.e... 2011-09-03....
