suggestions for my guitar class curriculum?

i taught guitar lessons for many years, i have the basics down...but now, in the school i work in, i'm teaching a guitar class, and its a bit different...first of all, i have some kids 5 days a week (as opposed to once a week)...second, there are some kids in the class who aren't too passionate about guitar, they say "chords are too hard, my fingers are too stubby!", but i still have to find something to teach them...i can't just be like "if you won't play chords, get the F*ck outta here!!! this is GUITAR class for god's sake!"

so i'm just wondering if you guys have any suggestions for fun riffs that aren't too difficult...for example, this one kid who has a hard time with chords is pretty good at playing riffs, and he likes michael jackson so i've been teaching him riffs like Smooth Criminal, Beat It, Thriller, etc

i've already gone through the old standards like Smoke on the Water, Enter Sandman, etc

    Blink 182 has some great riffs on ultimate guitar.
