Just got a Smoker

Just snagged a Weber 18.5 inch smoker

anyone else here in the smokin trade?

any tips??

    make sure you have a chimney starter
    learn how to make a rub
    if you think its done, it probably needs a few more hours
    There is big difference between smoking chicken or fish and trying to do ribs, pulled pork or brisket.

    some cheese is 'smoked' but I think it's more of the liquid smoke that they add in to give it that flavor...a smoker would probably melt the cheese... :(

    actually milk is cow sweat...so that would make cheese curdled sweat....mmmm delish!

    Cheese is smoked with wood. It's done indirectly to avoid any heat, but hardwood smoked cheese if awesome!
