Help me understand underground gambling circles

Maybe not the most decisive thread subject but...
You ever see those movies when people are gambling (illegally-like on fighting) and they are just throwing money around or handing it to a guy without even words being exchanged- is that real? I mene, how are the odds decided in those situations and how does the guy accepting the money keep track of all the people hes getting money from/how much they gave/who they bet on.
There must be some underground gamblers out there...

I used to play a dice game called silo and we would bet amongst ourselves
Or
Someone handles the bets ....so I'll say here's $100 on silo or against silo and hand him 100
If I win he pays me or if I lose he keeps my 100

Unless someone said I'll give u x amount to 1 on a specific roll
