The 11/17/97 show is just disgusting, but all the songs are 15+ and funky as shit.
The '94 and '96 Halloween shows are pretty badass.
The "Island Tour" is 4 shows from '98 that are just downright NASTY. They play everything you'll need to hear, for the most part, and all 4 shows are top-notch. I'd say get these about most shows. The NYE '95 and '97 shows are also a must.

I'd probably start with these, then go from there. Really, anything officially released is good, I'd say - good sound quality and while some are better than others, it's all Phish
Download/buy the Island Tour first then I'll give a couple shows a listen tonight and see what I'd recommend. There are some shows (the 11/17/97 I listed earlier) that a newer fan wouldn't necessarily like and an acquired taste (15+ minute jams).
check out the summer of 97, 8-13 through 8-17, and the new years shows from that same year,
also you can listen to anything from europe and the summer of 98
and really check out some of the 3.0 stuff, the gorge 8-7/8, they cover the stones exile on halloween, albany 11-27/28 has some classic indoor heat!! and miami new years sums it all up
