Bob Dylan (I call it the "Anti-Alvin"). I'm really enjoying this disc, a lot more than I thought I would.
Cartoon Christmas Classics (Songs from Rudolph, Frosty, etc.) Great stuff, although it doesn't have the Heatmiser song...

Go Tell it On the Mountain by The Blind Boys of Alabama. I got it because Tom Waits is on it, but it has a bunch of interesting guests (including George Clinton, Me'Shell Ndegéocello, Shelby Lynne, Chrissie Hynde).
Speaking of Tome Waits, his song "Christmas Card from a Hooker in Minneapolis". He usually does a "Silent Night" intro when he does it live.
The Bells of Dublin by The Chieftains is really good.
Anything with the classics - Rat Pack, Nat King Cole, Louis Armstrong - is good.
Vince Guaraldi is a must.
