Anyone care to share healthy recepies?

Trying to put more veg in my diet and i'm looking for varied health but simple meals for breakfast, lunch or evening meal. There's plenty of recipies ect on websites but i want your fav meal...

    My girlfriend made a recipe the other night that was unbelievable!

    Thai Peanut Salad...

    Asparagus
    Broccoli
    Zucchini
    Pea pods
    Tofu (optional, could use chicken)

    all dressed with a peanut sauce...

    I can get the recipe in detail if this interests you. My girlfriend has a plethora of vegetarian recipes that are super healthy and full of veggies. They are versatile, meaning that the vegetarian version is optional and meat can be included just as well.

    Sounds different. Never tried Zucchini, tofu or peanut sauce so might be worth a try. If you can get the recipie in detail that would be great.

    roasted veggies of your choice
    mushrooms, red or green peppers, eggplant,green and yellow squash, tomatoes, pearl onions, garlic, asparagus
    drizzle with olive oil, season with salt and pepper, roast in the oven (325-375 depending on the oven) until done to your personal liking
    I tend to add a little balsamic vinegar when finished roasting
    I do this every weekend and keep them in the fridge for most of the week
    great as a side dish for almost any protein, appetizer, or in a sandwich/wrap with a little goat cheese (although that makes it more expensive)
    also
    lentils-french style minus the bacon
    chick peas-cold in an Italian dressing or cooked with cauliflower in a curry Indian style

    my favorite breakfast...

    1/2 cup non-instant oatmeal
    1 cup water
    small handful of raisins
    pinch of salt
    cinnamon
    splenda or honey to sweeten to taste
    microwave for 4:30 on medium heat

    lately i've been adding a half scoop of my favorite vanilla protein powder

    remember whole grains and protein will make you feel full longer.

    The post above reminded me of thsi one as well:

    My girlfriend hollowed out two red peppers, which I grilled, and then she stuffed them with pine nut cous-cous, with a side of pureed edamame....it was fantastic.

    My friend does the same but with cheese instead. Might try the substitute.

    Stuffs the peppers with cheese?? mmmmmmm

    Cous Cous is a great element to a dish though.

    mm a sort of chile relleno only with a bell pepper instead-great idea

    although not veg, I also have been known to roast two small chickens (4 pounders) at once over the weekend.

    it seems to taste better when I roast a whole organic chicken- I usually carve one up and "pull" the other

    then I make soup/stock with the bones

    it is also cost effective

    and no "you pull your chicken?" jokes please :lol::lol:
