Finally mastered cooking an egg in an avocado...they should sell those at restaurants, they'd make big bucks.

This intrigues me. How is this done?
    *pre-heat oven to 400°
*gather any 'mix-ins' you want to put in it: crumbled bacon, chopped green onions, chopped tomatoes, shredded cheese, etc
*slice an avocado in half-remove pit
*scoop out some avocado-2-3 tablespoons from each side- you'll figure it out after cooking a few-stuff face with scooped out avocado
*place avocado halves in a baking dish-you can mash it down a bit so they don't roll
*sprinkle a bit of your mix-ins in each half
*crack an egg into each avocado on top of mix-ins-don't worry if some egg spills out, you can eat the crispy fried eggy goodness later
*place in oven and cook for 12-15 minutes, depending on how well you like your egg cooked

I didn't grease the baking dish, but if you use a metal dish you will probably want to, I used glass, and the egg didn't stick.
you could put the mix-ins on top, but I've found they tend to burn.
no need to peel avocado, skin bakes fine.

top with hot sauce or salt/pepper-yum!

Thank you for the recipe! This sounds yummy. I'm assuming the avocado should be ripe, yes? =P~

fairly ripe, not guacamole ripe, but slicing/sammich ripe. I could eat 4 halves of this stuff!
