anyone have an AWESOME Gumbo recipe?

I'm in need of some spice... looking to make a kick ass gumbo. Anyone have a great fail safe recipe?

    this may sound cliche, but check out emeril's cookbook from a few years back and interpret it as you wish...we've made it for years and it never ever disappoints!!!

    Ingredients needed:
    1 pound of chicken
    1 pound of sausage
    or
    1 pound of shrimp
    1 pound of crab meat

    Gumbo mix
    1 large onion, chopped
    1 bell pepper, chopped
    2 rib celery, chopped
    ½ bag frozen sliced (chopped) okra
    1 can diced tomatoes
    Chicken stock
    Water

    I use a gumbo mix for the roux. It's a little quicker than making one from scratch. It will tell you on the package the amount of chicken broth and water you'll need.

    I'll either do a chicken and sausage one pound of each...Or seafood, a pound of shrimp and a pound of crab meat.

    Cut your chicken to about 1 1/2 inch pieces and the sausage to whatever size you want. Cook them before adding to the roux...

    Get your gumbo mix boiling in a big pot and then add:

    the chicken, sausage, shrimp, crab meat...whatever
    1 large onion, chopped
    1 bell pepper, chopped
    2 rib celery, chopped
    ½ bag frozen sliced (chopped) okra
    1 can diced tomatoes

    Bring to a boil then cover and simmer for 30 minutes.

    While it's simmering, you can cook rice to go with it.

    I make mine from scratch, but you can't go wrong with an Emeril recipe for gumbo!
