RC: It's lunch... I must be getting hungry... Who's the best cook in Pearl Jam, and what's PJ wine best served with?
JA: I'll probably say that I'm the best cook... I think, mainly, because I spent 8 or 9 years in a restaurant... So, I think that gave me a little bit of a head start... In Seattle, a place called Raison d’Être... Anybody who's living in Belltown in the '80s, if you mentioned that restaurant, they'll tell you that it was probably one of the original great restaurants in Seattle... I was making coffee, but I was paying a lot of attention... And I went through a big vegetarian/vegan phase during that time... So, I sort of learned how to cook without meat, which was not how I was raised... I was raised with a big chunk of meat on my plate... You have to have Trey Busch's Sleight of Hand, maybe like a Cab-Syrah blend... That would probably go good with any number of things... Cheese plates or some pasta...
RC: When did the wine come about?
JA: Trey has been talking to us for years, at least 10 years, maybe 15 years... He's a big fan... I've been to Walla Walla a few times... I've been to his winery... I always leave with a case of something... It's fortunate that he's a good winemaker... Because, otherwise, we wouldn't have a Pearl Jam wine...
RC: Did you guys sample before you signed off?
JA: I haven't sampled the batch that is out right now, but I did sample the last year's version of what they use...
