Eddie Vedder Stew

No..it's not a recipe from Dirty Frank's cookbook, it's one I found in a cookbook called "I like food, food tastes good". It has a bunch of recipes from different bands...the "Eddie Vedder Stew" is from Jone Stebbins (Imperial Teen). Apparently, it got it's name after Eddie ate several bowls of the stuff at a party.
Anyway, I've had the book for awhile, but I finally decided to make it today...it's quite yummy if you like veggies & curry! Perfect for a gloomy, chilly sunday!

I have plenty leftover! I think it would be pretty easy to add meat...but it's actually pretty yummy & filling without it.

You're welcome! I hope you like it!
I like the addition of the cinnamon stick..it adds a little sweetness and blends well with the curry..and it's perfect now that it's fall!
