No..it's not a recipe from Dirty Frank's cookbook, it's one I found in a cookbook called "I like food, food tastes good". It has a bunch of recipes from different bands...the "Eddie Vedder Stew" is from Jone Stebbins (Imperial Teen). Apparently, it got it's name after Eddie ate several bowls of the stuff at a party.
Anyway, I've had the book for awhile, but I finally decided to make it today...it's quite yummy if you like veggies & curry! Perfect for a gloomy, chilly sunday!

Here it is....
Ingredients:
2 tablespoons oil
1 c. chopped onion
2 tablespoons garlic, minced
1 1/2 tablespoons curry powder
6 carrots, halved and cut into 1-inch chunks
3 russet potatoes, cut into 1/2 inch dice
1 medium cauliflower, chopped
4 cups vegetable broth
2 tablespoons honey
1 cinnamon stick
0ne 15-oz. can of chick peas, drained
2 cups plum tomatoes, chopped , or a 14.5 oz can of crushed tomatoes
cilantro leaves (for garnish)
Directions:
Heat oil in large heavy pot. Add onion and saute for 10 minutes. Stir in garlic and cook for 2-3 minutes more. Sprinkle with curry powder and cook for one more minute, stirring to mellow flavors. Add carrots, potatoes, cauliflower, broth, honey, and cinnamon stick, and bring to boil. Then reduce heat and simmer for 20 minutes. Add chick peas and tomatoes, and simmer 15 minutes more. Garnish with cilantro.

I like the addition of the cinnamon stick..it adds a little sweetness and blends well with the curry..and it's perfect now that it's fall!Show #13 was a lucky one for me....0
